Butchers Tip. Lamb should only be cooked to medium rare to maintain the flavor and tenderness of the product. The exception being lamb that is being slow cooked or cooked in a curry.

These mini roasts are so delicious. Even the kids loved them! Cook as per Jodie's instructions below (I did two mini roasts for a family of four so added another 5 mins to cooking time). Perfecto!

Luscious lamb

Just had this for dinner tonight. It is so nice. The meat is so flavoursome. Perfect for 2 with some roast veggies.

Perfect mid-week roast for two

These lamb mini roasts are the perfect size for two, giving you a beautifully tender, pink and juicy lamb roast on the table in 30 minutes. The marinade is delicious!
* Bring the lamb to room temperature and par cook some new potatoes and pumpkin (microwave for 5 minutes) while you preheat the oven to 200C fan forced or 220C without fan
* Put the lamb & veg into a roasting pan lined with baking paper or use an oven bag for no-mess cooking. Throw in some cherry tomatoes (or small truss tomatoes if you want to be fancy)
* Sit back with a glass of wine while you roast everything for 20 minutes.
* Rest the lamb in a warm spot for 5 minutes before slicing, use this time to wilt some fresh leafy greens with garlic & butter... perfection!
Now there's no excuse not to have a lamb roast any night of the week!
